Logo Design Brief

I need a logo design for identity and brand development. This would be a logo design for a new bar and grill restaurant I am opening called "GridIron". I would want to use the logo for various applications in branding such as signage,menus,uniforms,napkins etc. I would need to see at least three concept designs as colour visuals and thereafter supplied in PDF files.
I want to incorporate in the design an image of a Texas Longhorn cow skull and horns. I don't however want it to look like a branch of a Hells Angels Chapter. The restaurant will be in an urban stripped back retro/industrial look with bare concrete columns, old wood floors and bare ceilings with exposed air conditioning trunking, as seen in many New York warehouse type buildings.
GridIron will be a steak/burger operation appealing to both children and parents.It will have a long bar with an open theatre kitchen and bar dining. It will be a fun place with maybe a table tennis table in the middle of the room. It will be affordable but cool....
