Logo Design Brief

We are a lunch and dinner restaurant and bar in a historic village (1830) called The Stone Room to date. We are changing the present tapas dinning menu to include more substantial 'traditional' meals and installing a bar. We need a new a new Logo for our 're-launch'.

The logo should have a historic feel but have a modern slant. Include colours that suggest sandstone and old world.
The logo should communicate quality, relaxation, history.

Our building was built in 1844 and has a main room that is convict built sandstone (see photo). The fireplace is huge with distictive 'fire dogs' and grate. We see the logo as a stylised fire place and grate or just the fire dogs and grate in a historic feel. I have included a couple of directional logos and a drawing of the fire dogs and grate as a guide. The logo will be on the sign hanging on the street in a quaint old historic town. Suggest alternatives to "Bar and Grill"?
