Logo Design Brief

We need a logo design for a new company called "Brooklyn Catering Company". We are looking for a simple, modern, clean and minimal logo. We would like it to be only text, or if there is an image or design element, for it to be minimal. We will also consider shortening the word "Company" to "Co." and/or adding the word "The" to the beginning if that makes for a better logo. If you google "Brooklyn Company" you will see many different type of companies that use "Brooklyn ___ Company" and many of their logos are minimal text logos. We would like to go in that direction.
