Logo Design Brief

We need a logo for a bar that will be opening soon. The name is "Phat Fish, Purveyors of Seafood & Fine Beverages". As a guideline, I would like the top line to say "PHAT FISH" in a funky, block-letter font and the bottom line to say "Purveyors of Seafood & Fine Beverages" in a small, classy (non-cursive) font.
I would also like to have a black and white sketch to the right of the text of a slender man (1920's style man) in a suit & tails with a top hat holding a fish by the tail in one hand and holding/drinking a martini with the other hand.

Target Market(s)

The bar is opening in a very trendy bar and restaurant precinct with demographic split pretty evenly between hipsters, uni students and business people. We need the logo to be cool and hip, but also bit smart and classy.
