Logo Design Brief

I need a logo design for a start up that will be a coffee and tea shop with eastern medicine influences and all natural and non-toxic products. Think of a cross between a coffee shop and Eastern Medicine clinic. The ampersand can be maybe made into the logo, can maybe be a coffee cup or look like steam rising (these are just ideas, not necessities) The feeling should be one that stands out yet is subtle and tranquil expressing hints of sanctuary or a place of respite.
