Logo Design Brief

I need a logo/brand/packaging design for my UK based coffee roasting company called "Arabica Knights". I currently just have my one product which is the main seasonal espresso blend but want continuity when I offer different types. I have originally made a logo and modified one of the characters as it was a $ sign as part of the "attitude" font set. I am happy to continue using the font if the designer feels they can make it work or am also happy to completely change it. I would like to add colour somehow and have this as flexible in th brand design. The logo is likely to be just stamped on a Kraft bag as is currently so probably best to stick with black or with a version in black. For examples of logo/brands styles I like see www.climpsonandsons.com & www.brickbrewery.co.uk.

Target Market(s)

I am aiming my product primarily at independent trendy/artisan/local type cafes so want the logo/brand to reflect this. It should be cool but accessible.
