Logo Design Brief

We need a logo for our new restaurant based in the Netherlands. The restaurant will be a classy bistro styled tasting room and wine bar called "de Graaf". We need a logo that represents our bistro style way of looking at tasting and wines combined with a medieval counts head which is small enough to be displayed on a glass, napkins and cutlery.
