Im a NSW based designer and Ive added my design and used 3 of your menus to showcase how the design would flow through all of them. Can also do the 4th menu if you are happy with the direction im going in.

Ive used a colour based what would go with the deep green hues and wooden interiors of your hotel. Let me know what you think, can also make it in a more subtle shade if you are interested.
