Home Interior Redesign Floorplans (two images required)

Graphic Design Brief
I recently moved into a house and I don't like the internal layout. This design competition is to provide me inspiration for a new interior floorplan.
I have provided a pdf here that shows the current layout, together with the same floorplan (but empty for you to fill in). There are a few notes below in relation to my desired, finished result.
NOTE: In the first instance, I'm happy enough with something basic, a hand-drawn, back of an envelope scribble is fine... it doesn't have to be a detailed auto-cad finished piece. It's important to get the concept correct before spending time doing a detailed finished drawing. (If I select your design, though, I will need a proper, usable drawing at that stage).
In terms of house rebuild budget... I am certain that some of the more adventurous design concepts that you could create are going to cost a lot more to build - with this in mind I would like two options please:
Option 1 - Maintaining the SAME footprint of my current house.
Taking my existing house shape and playing around with the rooms to make it more functional. Move the stairs, switch rooms around, add windows... whatever, but don't change the shape.
Option 2 - Extension of house to incorporate the garage.
My garage is detached, a couple of meters away from my house. My second option is to include this into the design (perhaps move the kitchen there, or a living area, or utility room etc.)
Some facts about the house / wish list.
The house is in the countryside, next to a canal, lovely views - but I can't see this from downstairs at all. So one option I'd like to explore is turning the house upside down and moving bedrooms downstairs and the kitchen / living area upstairs and perhaps increasing the number of windows upstairs so I can enjoy the views.
The staircase is quite steep, so I don't mind if this changes / get's moved.
Some of the walls (the ones around the current kitchen and utility area) are very thick old stone walls - you will be able to see these are ticker on the current floor plans. These are going to be load-bearing walls, so if these are removed within your design it would require RSJs (steel joists) to support the ceiling, which can be done... but would dramatically increase costs for me, so I would prefer to avoid this please.
Downstairs is currently dark and a bit damp - there's not enough light getting in.
The current downstairs toilet/utility/back porch area is awful; it's too cramped and I can't even open the toilet door fully.
I would like ensuite bathrooms for the bedrooms if possible (and a walk in wardrobe would be a wonderful addition).
Finally, I want to include a small recording studio / music room (currently in the garage), large enough to house amplifiers, mixing desk and other recording equipment.
House occupants: mum, dad, two young adults, a cat and a dog.
Any other questions - happy to respond. Many thanks and good luck!
