Can the logos be dependent on color, or will there be a need for grayscale versions?

I would hope for a more 'notable' connect, but yes, no reason they can't share color.

I ask because sometimes a logo might be used on a letterhead or other black and white situation. This wouldn't be a concern if the logos would only be used on T-shirts or online, etc. I had an idea that was more dependent on color, but the idea I ended up deciding to develop isn't dependent on color, so the question isn't so important to me anymore, but it's a nice thing to keep in mind.

Honestly, I'd rather it just be a good logo over making it fit 'every' multi-use possible. In regards to the letter heard other print materials, we would just create something different that related to the elements of the main/sub logo or team.

Yes, I know that might not be the most cost effective approach. However, quality breeds accountability much more than cost effectiveness at times.
